Chocolate Pumpkin Muffin Recipe

I have a MAJOR sweet tooth!! I always have. So, naturally my brain is always thinking about sweets the majority of the time. I have been back on track for eating healthy since my insane I’ll eat whatever I want holiday binge! I know that most people suffer from this as well, so I came up with a muffin recipe that will satisfy your chocolate cravings without being terrible for you! Now, this isn’t the kind of recipe that’s going to taste like a donut or some chocolate cake that you can get from a bakery… but it will satisfy your chocolate craving. So, you’re welcome. Haha!

Ingredients:

1/2 cup pure organic pumpkin

1/2 cup plain greek yogurt (I get my yogurt from a local farm and strain it to make it greek. Stoneyfield is a great organic yogurt that you can purchase in the grocery store though- but it has to be plain)

4 organic eggs

1 organic banana

1 4oz package of Cacao sweet nibs

2/3 cup raw coconut flour

1/3 cup unrefined virgin organic coconut oil

1 heaping tbsp organic pumpkin pie spice (I didn’t have organic- shame on me- but I will next time!)

1 tsp baking soda

1 tsp organic apple cider vinegar

2 tbsp Cacao powder

1 tsp salt

 

Combine all ingredients in your mixer. Melt the coconut oil before adding. Add all of the dry ingredients before the liquids. Eggs are best used in baking when they aren’t taken straight out of the refrigerator- so take them out about 30 minutes before you start this process and add them as the last ingredient before mixing. When you are baking- the less you mix the better. Now, that doesn’t mean that you shouldn’t mix your ingredients until they are smooth and combined- just don’t over mix.

I used aluminum cups in my muffin pan and coated them with melted coconut oil by using a pastry brush, so the batter doesn’t stick to the cups.

When filling the cups with the batter… Fill 3/4 of the cup to leave room for rising.

Bake at 400 degrees for 20 minutes- everyone’s oven’s are different, so stick a fork in the middle of one of the muffins and if anything comes out on the fork- they need more time in the oven.

I definitely suggest warming the muffins and adding a little grass-fed butter and a dash of honey if you are really craving something terrible for you. BUT! Taste them first before adding anything. If don’t want to use Cacao nibs… There are chocolate chips that are made without soy (if you didn’t know that soy is completely terrible for you… well it is… so don’t consume it) and they are sweeter and softer. You just probably don’t need 1 cup of them.. I would do a 2/3 cup if you choose to go that route.
